8-Bone Rack, Frenched (feeds four)

$70.00
Sold Out

Avg. 1.6lb, at $40/lb.

Ridgemeade Ranch lamb racks are frenched in the traditional “hotel cut” style, with chine bone removed for easy home roasting. Rack of lamb is naturally tender, but what makes it unforgettable is the definition: clean sweetness, a mineral brightness, and fat that renders into a light, savory perfume rather than heaviness. Sear it hard to build a dark crust, keep the center rosy, then finish with salt, lemon, and herbs. Give it quick, decisive heat, then a long rest—simple, precise, and deeply satisfying.

Ridgemeade lamb is grass-fed and grass-finished on diverse pastures. No grain. No antibiotics. Harvested once each year at 8 to 11 months of age in late fall, after a full grazing season and the first frosts, when cool-weather forages concentrate sugars and essential oils.
