Lamb Loin Chops (2 per package)
At an average .48lb each (two feed one person, so two per vaccum pack), Ridgemeade Ranch loin chops are one of the most tender, elegant expressions of lamb. Think of them as the steak cut… fine-grained, naturally juicy, and quick to cook. What sets them apart is the finish: clean sweetness, a mineral brightness, and a delicate lamb perfume that stays light on the palate. A hot pan or grill, a firm sear, and a pink center is all they need. Salt, maybe rosemary or thyme, and you’re done.
Ridgemeade lamb is grass-fed and grass-finished on diverse pastures. No grain. No antibiotics. Harvested once each year at 8 to 11 months of age in late fall, after a full grazing season and the first frosts, when cool-weather forages concentrate sugars and essential oils.
