Shoulder carries more connective tissue and intramuscular fat than the leg, so it turns lush when you braise it or roast it low and long. The outside goes dark and fragrant, the interior yields into slices or strands, and the rendered juices taste less like seasoning and more like the ridge itself…clean sweetness, mineral brightness, and a finish that lingers instead of coats.

Ridgemeade lamb is grass-fed and grass-finished on diverse pastures. No grain. No antibiotics. Harvested once each year at 8 to 11 months of age in late fall, after a full grazing season and the first frosts, when cool-weather forages concentrate sugars and essential oils.
